Our flagship tea, the Northstar, is a very special and aromatic fermented fireweed (Epilobium angustifolium) tea. This is our unique interpretation of the famous slavic fermented fireweed tea called Ivan Chai. The tradition of preparing and consuming fermented fireweed tea comes from Slavic people; in Estonia it has been popularised by Old Believers.
Our fireweed plants are foraged from the wild and ecologically pure nature of Haanimaa. We have a unique preparation method that is inspired by traditions: hand-rolled fireweed leaves and flowers are fermented and dried using solar energy and left to age for 4 months.
Different fireweed teas can taste rather differently. This is largely due to the preparation technique. But the uniqueness of every tea is also determined by its place of growth (the soil, the weather and the surrounding flora and fauna) and the specific microorganisms that are found on the hands of the maker, in the air and on the plants. The microorganisms are the ones that through fermentation transform the otherwise one-dimensional taste of fireweed leaves into a rich and aromatic herbal tea. Can be enjoyed throughout the day. Ivan Chai is a great substitute for coffee and tea. While being caffeine-free, it offers an equally satisfying taste experience as well as an energising effect.
